Hey Bow,
My Son is ten and has always had excellent success on the old standby woolybugger. He favors olive and purple depending on the overhead. Like FlyfishAR, I like to be able to put the bigger tippet on and let him muscle the fish a little. Plus the rig is easier to cast without an indicator or additional weight.
Sounds like net and camera work for you, but maybe you can sneak out for an early morning or too.
